Protein bowl with tempeh

SPICY MIXTURE

Garlic

Fresh ginger

Coriander seeds

Anise

Lemon grass

Nutmeg

Salt

Pepper


INGREDIENTS

Tempeh classic

1 cup whole grain Italian rice

Broccoli

Olive oil

Tamari soy sauce

Maple syrup

Balsamic vinegar

Shallot

Apricots

Pumpkin seeds


METHOD

1.Fry garlic and ginger in olive oil, add the rest of the spice mix and fry together. Add a cup of rice and two cups of water and cook for 25 minutes on moderate heat.

2. Cut the tempeh into cubes, fry in olive oil until golden brown, then add the shallots and apricots, fry briefly and finally cover it with sweet syrup, tamari sauce and vinegar. Fry until shiny caramelization.

3. Boil the broccoli briefly in a little salted water with a little apple cider vinegar added. 

4. At the end, sprinkle the pre-fried pumpkin seeds over the assembled dish.
