Kojibar with Hokkaido Pumpkin

Brown Rice & Sage

A simple recipe made from simple ingredients, yet rich in flavour and nutrition.

The combination of Kojibar, Hokkaido pumpkin, and brown rice creates a balanced meal, high in fibre and protein, designed to nourish, satisfy, and keep things simple. Food that truly makes sense.

Ingredients (2 servings): 

  • 2 × Kojibar (Grashka)
  • 150 g brown rice
  • 1 small Hokkaido pumpkin
  • olive oil
  • salt
  • fresh sage (for garnish)

Method

Cut the Hokkaido pumpkin into chunks (no need to peel). 

Place on a baking tray, season with salt, and drizzle with olive oil.

Add the Kojibar patties to the same tray.

Bake at 180°C for 25–30 minutes, until the pumpkin is tender and lightly caramelised and the patties are golden.

Cook the brown rice in lightly salted water according to instructions.

Serving

Serve brown rice on a plate, add the baked pumpkin and a Kojibar patty.

Finish with fresh sage.

For extra flavour, drizzle with good olive oil or add lightly roasted sage leaves.
