When you need a quick meal packed with vitamins and fiber, this wrap is a great choice. In my experience, it's also one of the most effective ways to get kids to eat their veggies. Maybe the magic lies in eating with your hands instead of using utensils?
This recipe makes one wrap per person, which is perfect for a snack or a light dinner. If you want a heartier meal, you can double the recipe or serve it with a mixed salad, creamy soup, and finish with dessert.
For 4 people
- 4 large whole wheat tortillas
- 1 pack of roller
- 1 tbsp olive oil
- 200 g grated young cabbage
- 2-3 roasted pickled peppers
- 1 red onion
- 1 large cucumber
- 4 tbsp mayo
- Chili sauce, to taste
Instructions:
- Cut each roller in half lengthwise and crosswise, then slice into sticks. Sauté in a pan with a little oil and set aside.
- Drain the roasted pickled peppers well and slice them into strips.
- Peel the cucumber and cut it into sticks.
- Peel and halve the onion, then slice it thinly.
- Warm the tortillas according to the package instructions.
- Spread 1 tbsp of mayo and about half a teaspoon of chili sauce (or to taste) evenly over each tortilla.
- Place grated cabbage in the center, then add the roller on top. Arrange cucumber sticks on one side and pepper strips on the other, then sprinkle with sliced onion.
- Fold the bottom edge over the filling (see photo) and roll the tortilla into a wrap.
- For a nice presentation, carefully cut the wrap in half with a sharp knife to reveal the colorful filling.
If taking the wrap on the go, wrap it in parchment paper and tie it with string, or use aluminum foil. Enjoy!
