Potato salad with Kimchi

INGREDIENTS

Kimchi 

Young potatoes

Young onions

Cucumber

Peaches

Fresh herbs

Mayonnaise

Yoghurt

Oil

Balsamic vinegar

Maple syrup


METHOD

Boil the potatoes in salted water and remove the skins. Prepare a mixture of mayonnaise and soya yoghurt, season with salt and mix well. Cut the ripe peaches into chunks and fry them in a pan with a touch of oil, finally glaze with balsamic vinegar and maple syrup. Add sliced cucumbers, young onions, Kimchi and glazed peaches. The dish can be refreshed with seasonal herbs such as dill, mint and lovage.
