INGREDIENTS
Broccoli
Sweet potatoes
Chickpeas
Paprika
Onion
Garlic
Ginger
Garam masala
Curry powder
Chilli
Coriander
Tomato concentrate
METHOD
- Fry the onion until golden brown, after that add the garlic and ginger.
- Add the curry spices, turmeric, cayenne pepper, garam masala, salt and pepper. Fry the spices until they release their aroma, then add the other vegetables: red peppers, sweet potatoes and carrots. Finally, add the tomato concentrate and mix everything together.
- In a blender, combine the cooked chickpeas and soya milk, blending until smooth. When the vegetables are well roasted, pour the chickpea-milk cream over them. Add some seasoning if necessary.
- At the end, use plain tofu, cut it into two long slices and fry until golden brown, turn them over and repeat. Finish it all off with some tamari sauce, lemon juice and dill. Cut the tofu as desired.
