Kojibar has always been about doing things a bit differently. Built on fermented koji barley, whole ingredients, and a chef-driven approach to flavour, it was never meant to imitate meat. It was meant to stand on its own.
Over the past year, Kojibar has grown beyond its original form. The product caught the attention of international partners, including the team at Juicy Marbles, where it was introduced under the name UMAMI BURGER in the UK. For us, this was an important confirmation that a fermented, plant-based product with its own identity has a place on a much larger stage.
But the real news is what’s happening now.
New Kojibar flavours, improved formulation
We have continued developing Kojibar, refining the texture, increasing protein content, and expanding the flavour range. Today, Kojibar is available in three distinct flavours, each built on the same fermented barley base, but designed for different culinary moods.
- Smoked Paprika
Warm, bold, and smoky, with 42 g of plant-based protein. - Spinach, Nutmeg and Rosemary
Fresh and herb-forward, with a lighter profile and 44 g of protein. - Porcini Mushrooms, Oregano and Black Pepper
Deep, earthy, and rich in natural umami, with 42 g of protein.
Alongside the patties, we have also developed Kojibar Minced, a fermented plant-based crumble with 38 g of protein, designed for sauces, stews, fillings, and fast everyday cooking.
Now available in Slovenia and online
All Kojibar flavours and Kojibar Minced are now available in Slovenia:

This marks an important step for us. Kojibar is no longer just a concept or a single product. It is a growing family of fermented, plant-based foods designed for real kitchens and everyday use.

Built on fermentation, not imitation
All Kojibar products are 100 percent plant-based, made from organic, regional ingredients, and produced in our own facility in Slovenia. Fermentation is not a trend for us. It is a tool for flavour, nutrition, and digestibility.
Whether you are discovering Kojibar for the first time or returning to it in a new flavour, the idea stays the same. Food that has its own identity and fits naturally into modern cooking.
