When sunny days tempt us outdoors but we still need to eat, hearty, nourishing salads are the best solution. They're quick to make and packed with energy. This salad, inspired in part by the famous Caesar salad, is full of macronutrients and refreshing flavors that will energize you and keep you light on your feet.
Ingredients (serves 2):
- 200 g crisp green lettuce
- 1 pack of Chiko
- 2 slices of bread
- 2 tbsp olive oil

- 2 tbsp mayo
- 1 tbsp pickled capers
- 1 tbsp caper brine
- juice of half a lemon
- 1–2 cloves of garlic
- pepper
- salt
Turn on the oven grill and prepare a baking tray.
Tear the lettuce into larger pieces, wash, and drain well.
Cut the bread into cubes, place in a bowl, and mix with 1 tablespoon of olive oil. Spread the bread cubes on the baking tray and grill until lightly browned. Set aside to cool slightly.
Cut the Chiko into triangles and sauté it in a non-stick pan with a little olive oil. Once it’s golden brown, transfer to a plate and let cool.
While the bread and Chiko are cooling, prepare the dressing. In a small bowl, combine the mayo, lemon juice, and caper brine. Add the capers and crushed or finely chopped garlic. Taste and season with salt and freshly ground pepper as needed.
Divide the green lettuce between two salad bowls or large plates. Top with Chiko and toasted bread cubes. Generously drizzle with the dressing.
