Pasta is life. This could be argued quite literally. Nowadays, it is difficult to imagine life without pasta.
We digress. During the winter we like thick pasta with plenty of room, which is where the delicious and juicy sauce can accumulate. ;) What about you?
INGREDIENTS
Eggplant
Frozen edamame
Red peppers
Tomato concentrate
Garlic
Bay leaf
Rosemary
Salt
Pepper
Red wine
Tamari soy sauce
METHOD
- Cook the pasta of your choice "al dente" in salted water.
- Finely chop the red peppers, eggplant and onions, fry them vigorously in a frying pan in order to bring out the sugars in the vegetables.
- Add the tomato concentrate and garlic to the vegetables and fry for a minute or two. After that add all the spices and stir to combine the flavours.
- Deglaze the vegetables with red wine and tamari sauce. If necessary, add pasta water to the sauce to keep the sauce 'juicy' and rich in flavour.
- Rinse the pasta under cold water, drain and mix with the sauce in a pan. Let them cook together for a few minutes to allow the pasta to absorb the sauce. Finally, add the smoked Oyster Jerky, edamame and the fresh herbs you have available (parsley, coriander and/or chives).
