Pita Bread with Smoked Tempeh

This recipe combines fluffy homemade pita bread with smoky, marinated tempeh and a refreshing, dairy-free tzatziki sauce. Perfect for lunch or a light dinner, this dish is packed with flavor and textures.

Pita Bread (Makes 4 Pitas)

Ingredients:

  • 300g all-purpose flour (T500)
  • 230ml warm water
  • 15g fresh yeast (or 7g dry yeast)
  • 6g salt

Dough Preparation:

Pour the warm water into a mixing bowl. Add the fresh yeast and stir until it dissolves.

Add the flour and salt to the yeast mixture and mix until combined. Knead the dough with your hands for about 7–10 minutes, until smooth and elastic.

Transfer the dough to a bowl, cover it, and let it rise at room temperature for about 30 minutes, or until nearly doubled in size.

Divide the dough into 4 equal portions and shape each into a ball. Cover the dough balls and let them rest for 10 minutes.

Roll each dough ball out to about 5mm thickness. Preheat a skillet over high heat and cook each pita for 1–2 minutes on each side until puffed and golden.

Marinated Tempeh

Ingredients:

  • 200g smoked tempeh (Grashka)
  • 30ml soy sauce (2 tablespoons)
  • 15ml lemon juice (1 tablespoon)
  • 15ml olive oil (1 tablespoon)
  • 10g chickpea miso (Grashka) (1 teaspoon)
  • 5g smoked paprika (1 teaspoon)
  • 5g ground cumin (1 teaspoon)
  • 5g garlic powder (1 teaspoon)
  • 5g onion powder (1 teaspoon)
  • 100ml water
  • Salt and pepper, to taste

Tempeh Preparation:

Combine all marinade ingredients except the tempeh in a saucepan and bring to a boil. Reduce the heat, add the tempeh (cut into pieces), and simmer over low heat for 10–15 minutes.

Remove the tempeh from the marinade and drain.

Heat a skillet over medium heat, add a little oil if needed, and pan-fry the tempeh until crispy and golden on both sides.

Tzatziki Sauce

Ingredients:

  • 250g soy yogurt (Grashka)
  • 1 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 30g lemon juice
  • 15g olive oil
  • 10g fresh dill, chopped
  • Salt and pepper, to taste

Tzatziki Preparation:

In a bowl, combine the soy yogurt, grated cucumber, garlic, lemon juice, olive oil, and chopped dill. Season with salt and pepper to taste and mix well.

Spread a generous layer of tzatziki on each pita bread.

Top with sliced tomatoes, cucumber, red onion, marinated and pan-fried tempeh, and a sprinkle of fresh dill for garnish.
