Fried Sauerkraut with Roler
If you're not a fan of sauerkraut, you probably haven't tried it fried. In my experience, it's so tasty that even kids who usually don't like it will eat it. Sauerkraut pairs wonderfully with potatoes and roler.
Ingredients (for 4 people)
- 400 g sauerkraut
- 1 onion
- 1 tablespoon olive oil
- 8 small potatoes
- Fleur de sel
- Freshly ground black pepper
- 1–2 packages of roler (depending on appetite)
Instructions:
- Wash the unpeeled potatoes, place them in a pot, and cover them with cold water. Cook until they are soft enough to pierce with a fork but not so long that they fall apart (about 20 minutes). Once cooked, drain and rinse with cold water, then peel. Season the potatoes with fleur de sel and freshly ground black pepper.
- While the potatoes are cooking, prepare the other ingredients. Halve the onion and slice it into thin "half-moons."
- Heat a large skillet or heavy-bottomed pot on the stove. Add the olive oil, then the sliced onion and a pinch of salt. Sauté on medium heat until some of the onion becomes beautifully browned.
- Drain the sauerkraut well. If it’s too sour, quickly rinse it under water. The better you drain it, the better it will fry. Add the sauerkraut to the onions and fry, stirring regularly, until the sauerkraut also develops a slight brown color.
- Remove the roler from its packaging and, if desired, make a few diagonal cuts across it. Fry it in olive oil, turning it frequently, so it browns on all sides.
- Serve the fried sauerkraut, cooked potatoes, and roler on plates and serve immediately.
