Chiko Burger with Kimchi

Is there anything more delicious than a burger? This one is a bit different, though, as we won’t be making a patty—instead, we’ll use a hefty slice of Chiko. To make it even more nutritious and especially tasty, we’ve added vegan kimchi, a Korean-inspired fermented spicy vegetable mix.

for 2 people

  • 2 burger buns
  • 1 pack of Chiko
  • lettuce leaves, washed
  • 1 onion, peeled
  • 2 tablespoons oil
  • salt
  • 2 tablespoons mayo
  • 2 teaspoons liquid from the kimchi jar
  • 2 teaspoons kimchi
  • ketchup (optional)

Slice the onion into rings and sauté it in oil in a small pan until golden brown. Transfer to a plate and season with salt.

Cut the Chiko in half to get two wide slices. In the same oil used for the onion, sear the Chiko on both sides until golden brown. Set aside.

In a small bowl, mix the mayo with the kimchi brine.

Cut the buns in half and toast them in a large pan with a bit of oil.

Spread the bottom half of each bun with the kimchi mayo, layer with the sautéed and salted onion, followed by lettuce, seared Chiko, and kimchi. Top with the other half of the bun, spread with more kimchi mayo or ketchup.

Serve immediately.
