Bruschetta with Bean spread

We were looking for a formula for joy and we found it. 

Imagine a slice of baked sourdough bread, richly coated with a fermented borlotti bean and horseradish spread, pan-caramelised cherry tomatoes, shallots, plum marmalade, thyme and lemon zest essence. Divine.   


INGREDIENTS

Bean 

Sourdough loaf 

Roasted cherry tomatoes

Olive oil

Thyme 

Garlic

Plum jam

Balsamic vinegar

Lemon zest 

Salt 

Pepper


METHOD

In a large frying pan, sauté the cherry tomatoes and onion on one side in olive oil until the vegetables are caramelised. Add the finely chopped garlic, stir, then add the homemade jam, thyme and lemon zest. Finally, drizzle with balsamic vinegar and season with salt and pepper. 

On the other half, bake two slices of bread on both sides. 

Spread the baked bread slices generously with the Bean spread made from fermented borlotti beans and horseradish. Add the roasted vegetables to each slice and garnish with fresh herbs. 

Eat slowly and moderately, which in this case will be quite a challenge. Good luck.
