This light spring tart is a perfect addition to any festive table. Packed with smoked tofu, it’s rich in plant-based protein while still feeling fresh and light alongside main dishes.
The best part? It’s incredibly quick and easy to make, and beautifully vibrant on the plate.
Ingredients
Base:
- 1 sheet puff pastry
Filling:
- 1 bunch green asparagus
- 150–200 g smoked tofu (coarsely grated) (you can order it online here)
- 2 tbsp olive oil
- salt to taste
- freshly ground black pepper
- ½ tsp turmeric
- 1 tbsp lemon juice
Optional:
- 1 clove garlic (finely chopped)
- nutritional yeast
Instructions
1. Prep
- Preheat the oven to 200°C (390°F)
- Place the puff pastry onto a baking tray lined with parchment paper
2. Prepare the filling
- Coarsely grate the smoked tofu
- Add: olive oil, salt & pepper, turmeric, any additional spices to taste
We kept the tofu simply grated to maintain a more textured, rustic feel.
If you prefer a creamier version, you can blend it into a spread and optionally add nutritional yeast for a more cheesy flavor.
3. Asparagus
- Trim off the woody ends
- Lightly season with oil and salt (optional)
4. Assemble
- Evenly spread the tofu over the pastry
- Arrange the asparagus on top
5. Bake
- Bake for 20–25 minutes, until the pastry is golden, the tofu is slightly crispy and the asparagus is tender but still vibrant
